Wheatberries are great, soaked or sprouted...
Within the raw food community it's not uncommon to eat soaked or sprouted grains. There are many raw-foodist who shun the use of grains, but I say it's better to go with what works for you. I personally use them. Sprouted wheatberries are great to use for a salad dressing base (blending them with the other dressing ingredients), because it acts as a great "thickener," AND it makes the salad "heavier" (hearty...more density to your salad).
Whether you are into "raw food cuisine" or not...there is nothing wrong with using soaked wheatberries if they work for you...(ie. you are not gluten intolerant).
My kids love them!
Steel cut oats are great soaked, too (steel cut oats are raw)...they are so nice as a cereal in the morning (drain excess water and mix in a small bit of celtic sea or himalayan salt) with a bit of honey or agave nectar drizzled on top; YUM!
